A disembodied fork, glistening with purple juices reaches into a steampunk machine and disgorges pulped remains into the kind of wicker basket that used to catch the heads of guillotined aristocrats during the French Revolution. Alessandro Saffo’s image could be quite disturbing if you didn’t know that it was shot at the Graci winery on Mount Etna and nothing more demonic was occurring than wine racking - moving wine from one container to another using gravity rather than a pump.
